Richness and generosity
Grape variety: Chardonnay
Soil Structure: Sand and Loam
Vineyards: South-east exposed hillside, at an elevation of 360 m. Clusters show nice ripeness
 
Half is fermented in thermo-regulated vats, the other half is fermented in oak barrels of various ages with regular agitation
 
Matures a year before blending
 
Color: Deep gold
Nose: intense and rich, lightly woody
Palate: entry is round and harmonious, of aromatic complexity, associating grape ripeness to mellow wood. Long lingering.
Food/ Wine pairing: white meats with cream, veal sweetbread, fish with lemon butter, quenelles, savory pies, cheese.
To be served at 12-14
Production: approximately 3000 bottles - Magnums available
2016 Vintage

Covered with honour, this wine is a blend and comes from a single parcel. One part of the blend is vinified in steel vats whilst the other is vinified in aged oak barrels. The final blend occurs after maturing a year.

This process gives the wine aromatic finesse, with mellow hints of wood, respecting the minerality and underlying straightforwardness.

A gastronomic wine, round and generous, exceptional.
Its younger brother, the 2017 Vintage, has been recently bottled and is resting.
Very promising and likely to give his older brother good competition.
