Elegance and minerality
Grape variety: Chardonnay
Soil Structure: Clayloam
Vineyards: Vines planted in 1975 at the bottom of a narrow valley, cool with little sunshine at an elevation of 280m. Late ripeness.
 
Prolonged alcoholic fermentation in naturally present yeast through temperature control. Spontaneous malolactic fermentation at the beginning of spring.
 
Matures on lees for a year in steel vats to preserve aromatic purity linked to old vines and the particular terroir
 
Color: bright gold
Nose: minerals, very pronounced
Palate: slender and elegant, taut with a saline finish
Food/ Wine pairing: veal sweetbread, scallops, risotto, poached or grilled fish, white meat, poultry, cheese
To be served at 12-14

The terroir of this Clos owes its particularity to its origins: the presence of a small creek tens of thousands of years ago where the soil in the creek’s bed is composed of sand and loam.

This small land parcel provides a confident, high class cuvee, straightforward and saline.
Matures over a year on fine lees in steel vats to express Chardonnay’s purity.
This wine is already delicious, but will be perfect Summer 2019 onwards.
